Cranberry Applesauce

  • 3 lbs apples, cut into 1/2-inch thick slices (try a combination of gala, golden delicious and others)
  • 1 cup fresh or frozen cranberries
  • 1 cinnamon stick
  • 2-4 Tbsp sugar
  • 3/4 cup water
  • 2 tsp freshly squeezed lemon juice

Directions: In a large saucepan, combine apples, cranberries, cinnamon stick, sugar, and water. Bring to a boil. Reduce heat and then cover and simmer, stirring occasionally until apples are tender, 30-25 minutes.  (If sauce starts to stick to the bottom of the pan, add a little water.)  Remove from heat, discard cinnamon stick, stir in lemon juice, and chill.
